Mini Pies


  





 
One of my favorite Christmas gifts this year (it's basically in a tie with my steam mop) is the Breville pie press my in-laws got for me.  I love pie, but it's kinda naughty to have a whole one sitting around our house because we've been known to eat a whole pie in two days. Just the two of us.  These mini pies are not only adorable but thankfully they bake up in perfect proportions and freeze well so they don't all get eaten at once.  For the press' maiden voyage we baked strawberry-rhubarb pies. They were scrum-perfection topped with vanilla bean ice cream. Obviously, we have some kinks to work out with the issue of the crust edges....bu tit'll be a labor of love.
